INGREDIENTS - serves 1

2 slices of rye bread or similar

Spread half an avocado smashed with a teaspoon of feta, drizzle lemon juice and salt/pepper to taste 

Half cup of spinach

4-6 chopped cherry tomatoes  

2 poached eggs

2 slices of smoked salmon
